Watermelon & Goats cheese salad

serves 3 and ready in approx. 20 minutes

Shopping LIST:

 

800g watermelon, 70g rocket, 180g goat cheese, grated rind of 1 lime, juice of ½ lime, freshly crushed black pepper for seasoning.


Method:

  • Put 800g watermelon flesh, cut into large cubes, in a large salad bowl. Sprinkle with the grated rind of 1 lime and juice of ½ lime, then season with a little freshly crushed black pepper and toss gently together.

 

  • Sprinkle over 70g rocket and 180g goat cheese, cut into cubes, and gently toss together.

 

  • Squeeze lime juice on top of each salad plate.
